Blueberry Buttermilk Coffee Cake

INGREDIENTS :
STREUSEL TOPPING
  • ¼ cup all-purpose flour $0.04
  • ¼ cup brown sugar $0.16
  • 2 Tbsp softened butter $0.18
  • ½ tsp cinnamon $0.05
COFFEE CAKE
    • 2 cups all-purpose flour $0.33
    • 1 Tbsp baking powder $0.24
    • ¾ tsp baking soda $0.02
    • ¼ tsp salt $0.01
    • ½ cup white sugar $0.16
    • 2 large eggs $0.55
    • 1 cup buttermilk $0.60
    • ¼ cup melted butter $0.36
    • ½ cup blueberries (frozen or fresh) $0.60
INSTRUCTIONS
  1. Preheat the oven to 350ºF. In a small bowl, combine the ingredients for the streusel topping (flour, brown sugar, softened butter, and cinnamon) until they create a uniform, crumbly topping. Set the topping aside.
  2. In a large bowl, stir together the flour, baking powder, baking soda, and salt for the coffee cake batter. In a separate bowl, whisk together the white sugar, eggs, buttermilk, and melted butter until smooth. Pour the bowl of wet ingredients into the bowl of dry ingredients, and stir just until a thick, fluffy batter forms (do not over stir).
  3. Coat an 8×8 inch baking dish (or similar size) with nonstick spray. Spread the batter into the dish. Sprinkle the blueberries over top, then push them down into the batter with your fingers. Sprinkle the streusel topping over the top.
  4. Bake the coffee cake in the fully preheated 350ºF oven for 40-45 minutes, or until the top is golden brown. Slice into eight pieces, then serve.

  1. Preheat oven to 350 degrees F (175 degrees C). Grease 2 baking sheets.
  2. Combine butter and sugar in a large bowl; beat with an electric mixer until light and fluffy.
  3. Stir boiling water and coffee powder in a small bowl until coffee is dissolved. Stir in apricot jam. Mix into the creamed butter mixture.
  4. Stir milk and baking soda in a small bowl until baking soda is dissolved. Add vanilla extract. Stir into the creamed butter mixture.
  5. Combine cake flour and salt in a bowl; add to the creamed butter mixture. Stir well until a dough forms.
  6. Fill a cookie press with dough. Pipe dough onto the baking sheets. Repeat with remaining dough.
  7. Bake in the preheated oven until lightly browned, about 10 minutes. Transfer to wire racks to cool.

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Combine 1/2 cup margarine and 1/2 cup sugar in a bowl; beat with an electric mixer on low speed until creamy. Add 2 cups flour, 1 egg, baking powder, and salt; mix well until dough comes together.
  3. Press dough into bottom and sides of two 8-inch pie plates to form crusts.
  4. Bake in the preheated oven until lightly golden, about 10 minutes. Remove from oven and let cool.
  5. Combine milk and 1 teaspoon margarine in a saucepan over medium-low heat; bring to a boil. Remove from heat.
  6. Mix 1 1/2 cup sugar, 2 eggs, 2 1/2 teaspoons flour, cornstarch, and vanilla extract into a smooth paste in a bowl. Pour over hot milk in the saucepan.
  7. Return saucepan to medium heat and stir milk mixture until thick, 5 to 8 minutes.

Recipe for Chocolate Banana Bread

Ingredients

4 Ripe Bananas

9 tablespoon of Softened Butter

4 Eggs

11/3 cups of Sugar

A pinch of Salt

2 2/3 cups of all purpose Flour

1/4 teaspoon Baking Soda

1/2 teaspoon Baking Powder

1/2 cup of semi-sweet Chocolate chips

1/2 cup of Coconut flakes

Method

Combine the wet ingredients in a bowl.

Combine the dry ingredients in a separate bowl except the coconut flakes and chocolate chips.

Pre-heat your oven to 375F.

Combine both wet and dry ingredients and beat till the mixture is smooth.

Grease your baking pan with some oil and pour in mixture into baking pan. Top it with the chocolate chips and coconut flakes.

Place in the oven and bake for 30-35 minutes.

Serve warm with tea or coffee
